Lamb chops with mushrom merlot glaze…

Last night I was in the mood for lamb. That’s perfectly reasonable since lamb is delicious. I had some lamb loin chops in the freezer and decided to saute them and finish them in the broiler. Then I sauteed some fresh corn and green beans and finished with sauteed mushrooms in a merlot glaze.

Getting all the ingredients together. I made everything in one saute pan to reduce the dishes.

Lamb Chops with Mushroom Merlot Glaze

Lamb chops (i had 7 in my container)
2 cups mushrooms, sliced
2 cloves garlic, minced
1 shallots, minced
1 cup red wine
1 cup chicken broth, hot
olive oil
sea salt/pepper

Season lamb chops with olive oil, salt, and pepper. Get a saute pan hot with olive oil and when its nice and hot, add the chops to sear them. When their nice and brown, but not cooked through, remove them and add them to a broiler pan. Place them under the broiler on low and remove when cooked medium.

Add more olive oil to the pan and 1 clove garlic. When the garlic gets soft, add mushrooms and let it sit to brown. Stir occasionally and add a little oil if needed. Season with pepper only. When finished, take out and set to the side.

Add more oil to the pan and add the shallots and 1 clove garlic. When they become aromatic and soft, add the chicken broth and wine. Bring to a boil. Add the mushrooms back to the pan. Let it reduce until it’s almost gone and thickened.

Spoon the glaze over the lamb and enjoy.
