Triple Whammy Grilled Cheese…

The other day I was working on the house and lunch rolled around.  I needed something filling as I was starved.  I didn’t want meat, but still needed my protein fix.  Then a light bulb went on in my head since we have about seven types of cheese in the fridge.  Bread + cheese = gooey goodness.  Yes, that’s the plan!

The typical grilled cheese involves cheddar, but I didn’t have any.  No need to freak out though.  I had goat cheese, havarti, and swiss.  Those three stood out to me from the cheese bin.  I made two “patties” of havarti and swiss and spread goat cheese in between them for the bulk of the sandwich.

Another thing I like to do with sandwiches to keep them crisp and hot is to stick them into a 300 F oven to melt the cheese more.  It still keeps the crust crispy and even crisps the inner bread more.

Cheese oozing out from the side is ALWAYS a good thing ;).  Another success for the triple whammy theme.

It was going to be difficult to top lunch for the day, but dinner was just as good.

Triple Whammy Grilled Cheese

4 slices bread of your choice
Butter to spread
4 slices Havarti
4 slices Swiss
2 T regular goat cheese (Chevre)

Preheat toaster oven to 300 F.

Lay out your cheese on a board so that one slice of havarti is paired with one of swiss.  You should have 4 “patties”.  Butter the bread on one side for each slice.  Lay one patty on the non-buttered side, spread 1 T goat cheese, then place another patty on that and cover with bread.

When you have your two sandwiches made, place on a preheated non-stick skillet on medium high heat.  Cook about 2-3 minutes or until the bread has browned well.  Cook another 2-3 minutes on the other side.

Place sandwiches in the oven for about 3-4 minutes or until cheese starts to run.
